Alaska Update: Kenny and crew are pushing hard for the last 10 days or so
of salmon fishing. He has already put up several tons of salmon for
winter including Sockeye, King, Coho and Pink. Many sections of the KMA
(Kodiak Management Area) are tracking at or above ADF&G forecast and
meeting escapement goals. As of August 15, the KMA (Island-wide total)
reports 1,501,275 Sockeye harvested. The Pink Salmon run is substantially
greater than forecast and is currently well above the 5 odd year average
with 14.3 million pinks being harvested as of August 15. Kenny is still
on schedule to return to Albuquerque on September 1. We can expect his
2007 fish to follow him by about 3-6 weeks.
True Food News: Free Trade & Food Safety
In 2005, the United States, formerly known as the world's breadbasket,
became a net food importer for the first time, with a food deficit of
nearly $370 million. While Congress is rushing to implement more "free
trade" deals, concern is rising over the ever dwindling number of food
inspections. Contrary to normal expectation, the vast majority of
imported foods on American dinner plates is untested and unexamined. In
2007, the Food and Drug Administration will inspect only 0.6 percent of
imported vegetables, fruit, seafood, grains, dairy, and animal feed. The
Department of Agriculture will inspect only 11 percent of imported beef,
pork and chicken. Even more shameless is the fact that implementation of
the pending deals will require that products must meet the standards of
the exporting country only, no those of the importing country. SOURCE:

Recipe of the Week: Halibut Carpaccio
Thinly slice sashimi-grade halibut fillet, pour on a generous amount of
Bariani extra-virgin Olive Oil, juice of 1/2-1 lemon, season with Kenny's
Original Spice Rub and top with finely chopped fresh garlic and onions.
Let marinate 20 minutes-overnight. Easy and delicious!
