Fish and Chips with Guacamole

A delicious classic with a southwestern twist! Wild Pacific Cod is our first choice for this recipe, but almost any whitefish will do.
FISH

6 to 8 cups beef tallow, for frying

1 cup all-purpose flour

1 teaspoon baking powder

8 ounces amber beer

2 eggs

2 teaspoons salt

2 teaspoons pepper

2 teaspoons paprika (or cayenne powder if you prefer)

1 cup panko bread crumbs

2 pounds of Pacific Cod, Rockfish or Halibut cut into 4-ounce strips

Lemon slices or malt vinegar

CHIPS

4 large potatoes, peeled (or not) and cut into 1/4 by 1/4-inch thick strips

2 quarts beef tallow for frying

Salt and freshly ground black pepper
